Ingredients:
  • 1 pound chicken pieces
  • 2 tablespoons satsuma juice
  • 1 tablespoon satsuma zest
  • 1 tablespoon lemon zest
  • 3 cloves minced
  • 1 1/2 teaspoon paprika
  • 1 1/2 teaspoon rosemary
  • 2 teaspoons thyme
  • 2 teaspoons parsley, chopped
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon pepper
  • 1/4 cup vegetable oil
  • 1 satsuma slices (approx. 1 satsuma)
Directions:
    1. Preheat the oven to 350°F.
    2. Clean the chicken and pat dry with paper towels.
    3. Combine the remaining ingredients in a bowl and coat the chicken.
    4. Marinate overnight or at least 30 minutes.
    5. Remove chicken from marinade and place in a baking dish or cast-iron pan. Evenly distribute satsuma slices over the chicken.
    6. Bake for 40-45 minutes until the chicken has reached an internal temperature of 165°F.
    7. Serve alongside your favorite side.
